Boston Market Meatloaf And Creamed Spinach Recipe – Easy Peasy Meal of the Week

Boston Market Meatloaf

I went to Sam’s Club a few weeks ago and saw a cookbook I couldn’t resist buying.  It’s called America’s Most Wanted Recipes.  A cookbook of recipes from your favorite restaurants.

I had Babe (a.k.a my husband) go through the book and pick out the first recipe to try.  Without hesitation he picked:

Boston Market’s Meat Loaf and Creamed Spinach.

Boston Market Meatloaf Recipe 

*I didn’t have Italian breadcrumbs, so I used regular breadcrumbs and mixed in Italian seasoning.

Ingredients:

  • 1/2 cup ketchup
  • 1 1/2 tablespoon hickory barbecue sauce
  • 1 tablespoon sugar
  • 1 1/2 pounds lean ground beef
  • 1/3 cup flour
  • 3/4 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon pepper 2 gloves minced garlic
  • 3/4 cup Italian bread crumbs*
  • 1 egg, beaten

How To Make It

Preheat the oven to 400 degrees. In a large bowl, stir together the ketchup, barbecue sauce and sugar; set aside 1/4 cup of the mixture. With your hands, mix in the remaining ingredients. {Get in there and get your hands dirty!}

Bake covered for 30 minutes.

Uncover and drain fat from the pan, then slice the meat loaf while still in the pan.

Drizzle the reserved tomato mixture evenly over the meat loaf.

Bake uncovered for an additional 30 minutes or until cook through. Easy Peasy!

Boston Market Creamed Spinach Recipe

Ingredients:

  • 5 tablespoons butter or margarine
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup half and half
  • 4 ounces cream cheese, cut up
  • 2 tablespoons minced onion
  • Two 10 ounce boxes frozen chopped spinach, thawed
  • 1/4 cup water
  • 1/4 grated Pecorino Romano cheese

How To Make It:

In a saucepan over medium-low heat melt 3 tablespoons of the butter.

Stir the flour and salt into the pan until creamed together.

Slowly stir in half and half.

Stir in cream cheese and raise the heat to medium.

Constantly whisk until the mixture becomes think and smooth; remove from heat and set aside.

In a saucepan over medium-high heat, saute the onion in the remaining 2 tablespoons butter until translucent.

Add the spinach and water to the pan; reduce heat to low;cover.  Cook stirring occasionally for 8 minutes.

Stir the prepared sauce and the Pecorino Romano into the pan stir until completely blended.

Final Thoughts:

This whole meal was delicious!!  Babe kept saying how “freakin’ delicious” it was.  Those were his exact words.

Even my son Parrish is eating the spinach.  He is the hater of all things green (at least green foods) and he ate the spinach.  That should prove to you how good it was.

It was so easy to make and the ingredients are easy to find or things you already have.

If you were wondering about the mashed potatoes.  That was one thing I didn’t make from scratch.  Although, I do HATE and I mean REALLY HATE mashed potatoes in a box I hate peeling, boiling and whipping potatoes to make mashed potatoes more.  Luckily,  I found frozen mashed potatoes at Trader Joe’s (Not as gross as it sounds).

It’s so wasy to make and it’s actually really good.  All it is are little frozen mashed potato balls or discs and you put them in a saucepan with butter and milk and stir.

Trust me for $1.99 a bag it’s well worth it!!
